Banana Bread

  • 1/3 cup melted coconut oil or extra virgin olive oil
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 2 large bananas
  • 1/4 cup milk or water
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon, plus more to dust on top
  • 1 and 3/4 cups white whole wheat flour

Optional: 1/2 cup of the following if you like them! Chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit, fresh banana slices


  1. Preheat oven to 165C and grease a 9 x 5 inch loaf tin
  2. In a large bowl beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk
  3. Add the baking soda, vanilla, salt and cinnamon and then whisk to blend.
  4. With a big wooden spoon stir the flour into the mixture until it is all combined. if you're adding any of the optional ingredients, stir them in now
  5. Pour the batter into the greased loaf tin and sprinkle lightly with cinnamon
  6. Bake for 55-60 minutes or until a toothpick or knife comes out clean when you insert it into the center
  7. let the bread cool in the loaf pan for 10 minutes and then pop it out and place it on a wire cooling tray for 20 minutes before serving
