VACANCY: Sous Chef

Job Title: Sous Chef
Salary: Dependant on experience + bonus
Location: Birmingham

Purpose of the role:

Reporting to the Head Chef (Head of Catering in absence), you will be responsible for the day-to-day running of the kitchens, the control, production and service of all food for both the conference & events and match day functions. You will ensure that the highest standards are maintained and hygiene levels are kept consistently high producing food safely.  This must be paramount at all times through effective management, communication, leadership and organisation whilst working within budgetary requirements for the department.

The role requires strategic planning and implementation, staff development and training programmes; this will be underpinned by identifying wants and needs for personnel in the operation.  The post holder will establish and plan these training needs with the Head Chef.

The role reports into the Head Chef.

Key deliverables for this role will be:
  • To take control of and responsibility for conference & events and match day food production to the highest standard instructing and supervising a team of chefs including agency and freelance personnel
  • To promote teamwork and set a professional example at all times, leading and inspiring the brigade to produce the very highest standard of cuisine
  • To supervise services ensuring presentation of food is to a required contemporary standard and current trends
  • To attend training sessions as required by the company
  • To help develop, guide and mentor junior chefs under your supervision
  • To assist the Head Chef in menu compilation and possess an in depth knowledge of fine dining and high volume banqueting
  • To attend function sheet meetings on a regular basis when needed
  • To ensure labour targets are met or exceeded by efficient kitchen management
  • To assist managers and supervisors when necessary and on request
  • To oversee and supervise the Head Kitchen Porter in successful set up and breakdown of kitchen areas including correct usage of PPE
  • Comply with company HACCP standards in the kitchen including but not exhaustive of: food labelling, temperature control, acceptance of and storage of goods, all other paperwork completion
  • To report any maintenance issues to the Head Chef or facilities team immediately
  • To attend and contribute to periodic Health and Safety meetings

Responsibilities:
  • To be punctual and in correct uniform and ensure all other chefs are as per company handbook
  • To ensure all chefs know shifts they are rostered on for, their duties and responsibilities and have sufficient training and PPE to carry out said duties
  • To make contact with Head Chef if you cannot do a shift within 12 hours of shift starting to ensure a replacement can be found and ensure Head Chef is aware of any shift shortages
  • To work proactively and ensure all kitchen personnel work proactively and industriously
  • To ensure company procedures from the WBA catering handbook are upheld at all times
  • To maintain hygiene in line with company standards and work within the Food Safety Act 1990, Food Hygiene (England) Regulations 2006 – copy on request
  • To assist in recruiting and performance managing chefs
  • Carry out duties placed on employees by the Health and Safety at Work Act 1974
  • Ensure that the company HACCP system is adhered to at all times
  • Assist in evacuation of areas in the event of a fire

Person Specification:
  • Management/Supervisory experience
  • Exemplary modern cooking techniques and presentation
  • Good written and verbal communication skills
  • Able to work in a team or on own initiative and liaise with people at all levels
  • The ability to work to tight deadlines and well organised
  • Be of smart appearance and professional manner 

Other:
  • 37.5 hours per week, attendance at all home matchdays and other Club events as required.
